Wine and dine at the first steakhouse in Singapore to use US Black Cherry Wood on the grill.

With the high catchment of executives and banker types in the Marina Bay Financial Centre, it is only natural that a place like Brawn Steakhouse would open up there.
For one, the restaurant oozes corporate elegance, with mahogany hues, beveled mirrors and understatedly stylish chandeliers—exactly the kind of place you would bring a future business partner or a high net-worth client.
Opened in December last year, the restaurant’s unique selling point is the US Black Cherry Wood grill. The wood, typically used in luxury carpentry and furniture, is purportedly able to burn at a high temperature in order to seal in the flavor and impart a richer aroma than usual wood.
The star dish is the 21-Day Dry Aged Ribeye (S$70 for 300gm)—so named in reference to the painstaking process of storing the meat in near-freezing temperature to suck out the moisture, which aims to break down the tough, connective tissues in the meat, thus intensifying the flavor of the meat. We did, in fact, detect a distinctive smokiness to the meat; just be sure that your steak is done to medium rare so that the juiciness is not compromised.
Other cuts like filet mignon, tenderloin and short ribs are sourced from Meyer Angus and Angus Certified, corn-fed cattle, as well as Diamantina, a 100-day, grain-fed Australian breed. Those more inclined toward white meat can try the Whole Dover Sole (S$80).
But there’s no reason to skip the starters, hearty as the mains sound. The aromatic gamey-ness of the Duck Liver (S$26) goes well with the tart sweetness of the caramelized Granny Smith Apples, and the Black Mussels In Chardonnay (S$18) impressed us with the simplicity of its preparation—the diced onions added extra dimensions to the briny zing of the shellfish, the broth of which we promptly mopped up with bread.
Complementing the menu is a full selection of wines that include many older, rare French vintages, as well as the social lubricant of choice for big boys—premium single malt whiskeys.
The set lunch comprising a starter, mains and dessert is priced at S$38 and changes weekly.
